Green tea (绿茶) is made from Camellia sinensis leaves and buds, it normally goes through the process of withering, rolling and pressing, baking or steaming, and then drying. It does not undergo the ferment process in making oolong teas and black teas. Green tea originated in China, but its production and manufacture has spread to other countries in East Asia and possibly other parts of world. This is the most ancient tea category from China, the formation has changed through centuries. There are rich historical and cultural legacy with this tea. The Japanese tea is also big with this category. Although the green tea can be harvested in various seasons of the year, it is generally better appreciated with the first picks in the early spring. On the other aspect, the green tea is generally recommended to be consumed when fresh but not for long aging.
